Easy Easter biscuits to bake at home

These simple Easter biscuits are crisp, buttery, lightly spiced and ideal for decorating. Plus, they’re perfect for beginners and anyone who loves a sweet spring treat.
Whether you’re baking with little ones or treating yourself to a quiet moment with a cup of tea, this recipe promises delicious results.
Ingredients
- 100g unsalted butter (softened)
- 100g caster sugar
- 1 medium egg
- 1 tsp vanilla extract
- 200g plain flour
- ½ tsp mixed spice or cinnamon (optional but lovely)
- Icing sugar and water (or lemon juice) for simple icing, if you wish to decorate your biscuits.
Method
1. Cream the butter and sugar
Beat the softened butter and sugar together in a bowl until pale and fluffy.
2. Add the egg and vanilla
Mix in the egg and vanilla extract until smooth. Don’t worry if it looks a bit curdled at this stage, that’s normal.
3. Fold in the dry ingredients
Add your flour and optional spice and stir until the dough comes together.
If it feels sticky, add a tiny bit more flour.
4. Chill the dough
Wrap the dough in cling film and pop it in the fridge for 20–30 minutes.
This helps keep your biscuit shapes neat as they bake.
5. Roll, cut, bake
- Heat your oven to 180°C (160°C fan).
- Roll the dough on a floured surface to about 5mm thick.
- If you like you can even cut them into Easter shapes such as eggs, bunnies, chicks and flowers… whatever makes you smile.
- Bake for 10–12 minutes until lightly golden at the edges.
6. Decorate
If you’d like to decorate your bakes, mix icing sugar with a splash of water or lemon juice for a zingy twist. Drizzle, pipe or dip your biscuits.
