Our recipe for Scotch pancakes

Although we don’t make or sell pancakes in the bakery, we’ve got the knack for whipping up delicious, light ones.
Here we’re sharing a recipe for Scotch or American style pancakes, which are a smaller, but slightly thicker take on traditional British pancakes.
Why not have a go at making them yourself at home this Pancake Day, Shrove Tuesday.
Ingredients:
- 3 Tspn baking powder
- 1 Tbsp caster sugar
- 2 large eggs
- 30gm melted butter
- 300ml milk
- 225gm plain flour
- Pinch of salt
Method:
Mix all the ingredients together with either a hand whisk or stick blender.
Heat a frying pan with a little sunflower oil and ladle in a small amount of the batter to a diameter of 3-4 inches. Once air holes have formed on the surface, they can be turned over to finish.
Serve with fresh fruit and yoghurt or crispy bacon and maple syrup.
