How we got the Victoria sponge

The Victoria sponge is one of Britain’s most iconic cakes, steeped in history and closely linked to the Victorian era.
It’s also one of our favourite cakes in the bakery!
Named after Queen Victoria herself, this simple yet elegant cake became popular in the 19th century when afternoon tea was introduced as a social ritual among the upper classes.
Anna, the Duchess of Bedford and a lady-in-waiting to the Queen, is often credited with popularising afternoon tea.
Airy layers
During these gatherings, light refreshments were served, and the Victoria sponge quickly became a favourite. It is said that Queen Victoria herself enjoyed a slice with her tea, which led to the cake being named in her honour.
Traditionally, a Victoria sponge consists of two light and airy layers of sponge cake, sandwiched together with a generous spread of raspberry or strawberry jam and lightly whipped cream or buttercream.
Understated elegance
The top is usually finished simply, with a dusting of caster sugar rather than heavy icing, reflecting the understated elegance of the time.
The rise of the Victoria sponge also coincided with advancements in baking technology. The availability of refined flour, baking powder and better oven temperature control allowed bakers to achieve the soft, even-textured sponge that defines the cake today.
Before this, cakes were often denser and less consistent.
Balance of flavours
Over the years, the Victoria sponge has remained a staple of British baking, celebrated for its simplicity and balance of flavours.
While modern versions may experiment with different fillings or decorations, the classic combination of jam and cream remains the most loved, and our go-to in the bakery.
British tradition
Today, the Victoria sponge continues to be a symbol of afternoon tea and British tradition – a timeless treat that has been enjoyed for generations.
