How to make a lovely French chocolate cake

Our talented team of bakers have put together an easy to make recipe for a Moelleux au Chocolat, which is a lovely French chocolate cake that’s delicious with vanilla ice cream and strawberries or raspberries.

A gateau moelleux au chocolat is a moist rich cake with a dense texture. It’s not to be confused with a gooey-cented chocolate fondant.

We thought it’d be a great recipe to try at home with your children and grandchildren during the summer school holidays. Here’s how to make it:

To serve four

200g chocolate ideally about 70% cocoa solids

150g unsalted butter

100g icing sugar

50g flour

4 eggs

Method

  • Preheat the oven to around 200°C.
  • Melt the chocolate and butter in a Bain Marie, which is a bowl placed over another bowl, or pan, that contains hot water in. This will allow the melt to be gently and to work perfectly.
  • Pop the icing sugar and flour together in a separate mixing bowl. Then add the eggs and mix well.
  • Generously butter four ramekin dishes. When the chocolate and butter mix has melted, pour the mixture into the other bowl containing the flour, icing sugar and egg mixture. Mix it completely.
  • Pour into the ramekins until they are three quarters full. Cook for 10mininutes or until they have risen about three centimetres or an inch.
  • If you think your cakes look unlikely to be quietly removed from the ramekins, allow them to cool slightly and eat direct from the pot with your ice cream as a side.
