Autumnal fig tart recipe

We love a seasonal tart and our bakers have popped together the following recipe for you to try at home that’s just perfect for this time of year.

How to make the pastry

Ingredients:

  • 1 egg
  • 125gms butter
  • 250gms plain flour
  • 90gm caster sugar

Beat the sugar and butter together, add the egg and beat for a further 30 seconds.

Add flour and blend until a paste/dough. Do not over mix.

Refrigerate for an hour.

Use a 22cm tart dish/ring to make 12 decent slices.

Line the tart ring and bake blind for 14 minutes at 185°C.

How to make the filling

Ingredients:

  • 8 fresh figs, halved
  • 115gms butter
  • 115gms ground almond
  • 5ml almond essence
  • 55gms plain flour
  • 2 tbsp milk
  • 115gms caster sugar
  • 2 eggs

Beat the butter and sugar together until creamy.

Add the eggs one at a time. It may be necessary to add a little flour if the mixture is splitting.

Add the remaining flour, ground almond and essence.

Add milk if the mixture is too thick, it should drop off the beater easily.

Pour into the tart case and spread evenly. Distribute the fig halves around the mixture in a decorative way.

Bake at 185°C for approx. 35mins or until the mixture has risen and firm to the touch.

Serve warm with ice cream or custard and sit back and enjoy.
